Thandai, popularly called sardai, is a refreshing summer drink which is traditionally served during Indian festivals Mahashivratri and Holi. It is flavored with a number of dry fruits, especially almonds. Other dry fruits used to make Thandai are cashew nuts and pistachios. Not only, this, exotic mix of aromatic spices is used while making Thandai. They include peppercorns, fennel as well as cardamom to add to the taste. The refreshing and healthy drink is easy to make and tasty to drink.
Thandai can be easily made at home. There are a few steps that one would have to follow to prepare the drink and savor it when revelers play with colors.
Ingredients needed to make Thandai are as follows:
- 1/2 cup of almonds
- 1 1/2 cup of Milk
- Four tablespoons of sugar
- 1 1/2 teaspoon of black pepper
- One tablespoon of fennel seeds
- 2 tablespoon of poppy seeds
- Four green cardamom
- Two tablespoons of rosewater
- Two cups of water
- Handful of cashew nuts and pistachios
You can make Thandai by following the steps written below:
- Soak the almonds for at least five-six hours in water.
- After this, peel off the skin of almonds.
- Now, grind fennel seeds, black pepper, green cardamom and poppy seeds in a grinder.
- In a separate blender, blend the almonds and make a paste. You can add water to make the almonds blend correctly into a paste.
- Now, add the grinded cardamom, fennel seeds, black pepper and poppy seeds to the almond paste. Use water to blend the mixture until creamy.
- Add sugar to the mixture and add water until sugar dissolves.
- You can now strain the mixture by using a fine strainer or cheesecloth.
- Now mix the above almond liquid with milk and rose water.
- The refreshing drink, Thandai is ready serve.
- You can add ice to it and garnish with rose petals.
