Christmas and dry fruit cake have been long associated. No Christmas dinner is complete without a yummilicious dessert in the form of a cake. Cakes are loved equally by young and the old. If you do not want to buy high in trans-fat cake on this Christmas, then you must make one yourself. Here you will learn an easy to make dry fruit Christmas cake recipe that will make your Christmas dinner memorable and finger licking good.
Here is the list of ingredients that you will need:
3 cups flour (you can choose half wheat and half refined)
2 table spoon butter
1 and half cups of dark brown sugar
1/4 tea spoon salt
1 tea spoon ground allspice
1 tea spoon cinnamon
1/2 tea spoon nutmeg
1 and half cup each of currants; dark raisins and golden raisins
1 and half cups soft of chopped dried figs
1 1/2 cups of pitted and chopped dates
1 cup of chopped stoned dried prunes
1 and 3/4 cups of dried chopped apricots
3/4 cup of blanched and chopped almonds
2/3 cup, and 4 Tbsp brandy
2 teaspoon of instant espresso, mixed with 1 tablespoon of water
Preheat your oven to 300 degrees Fahrenheit. Now grease a round 9-inch cake pans with butter and lines its sides and bottom with wax paper.
Now in a big bowl, beat butter, and sugar together until the mixture becomes creamy and thick.
Now add eggs one by one and keep beating until the ingredients are completely mixed.
Now sift the flour in one bowl so that air mixes with it and also adds other spices like salt, spices, etc. too. Start folding the sifted flour and spices’ mixture in the egg mixture and continue until entire mixture is folded in it. You don’t has to mix but fold into the mixture.
Now add dried fruits, almonds, espresso and 2/3 cups of brandy and fold them in well.
By folding the mixture we pack a lot of air into it so that the cake is fluffy and spongy.
Spoon the mixture into the cake pan, and once you have emptied entire contents into it and place it in the oven on the center rack for baking.
Bake for 30 minutes and then reduce the temperature to 257 degrees Fahrenheit and after that bake for another 3 and half hours.
Now remove it from the rack and let it cook. Once it is cooled prick the top of the cake and sprinkle brandy on to it. Store the cake in an airtight container by wrapping it in a waxed paper. You can store it in a cool place up to three months.
